About Cocoa

The cocoa bean is the seed of the cacao tree (Theobroma cacao), a tropical plant indigenous to the equatorial regions of the Americas and today sub Sarah Africa becomes the dominant and world largest producers (Nigeria, Ghana, Ivory Coast).

Cocoa is Nigeria’s largest agricultural export and the second largest source of foreign exchange, (after crude oil).  Estimates for national production vary widely by source, but the one provided by the International Cocoa Organization puts estimated production at 220,000 MT per year, and is generally acceptable by the industry.

Nigeria was one of the largest West African producers in the 80’s before being overtaken by Ghana and Côte d’Ivoire due to federal government neglect as a result of oil boom and dissolution of cocoa marketing board in the 80s.

From the processed cocoa bean comes the fluid paste, or liquor, from which cocoa powder and chocolate are made. Chocolate is sold directly to the consumer as solid bars of eating chocolate, as packaged cocoa, and as baking chocolate. It is also used by confectioners as coating for candy bars and boxed or bulk chocolates, by bakery product manufacturers and bakers as coating for many types of cookies and cakes, and by ice-cream companies as coating for frozen novelties.

Cocoa powders, chocolate liquor, and blends of the two are used in bulk to flavour various food products and to provide the flavours in such “chocolate” products as syrups, toppings, chocolate milk, prepared cake mixes, and pharmaceuticals.

Many different sorts of products can also be derived from cocoa.

The husks of cocoa pods and the pulp, or sweatings, surrounding the beans and the cocoa bean shells can be used. Some examples of these uses are:

A- nimal feed from cocoa husk - As pelletised dry 100% cocoa pod husk, it can be used as an animal feed.

- Production of soft drinks and alcohol.

- Potash from cocoa pod husk - Cocoa pod husk ash is used mainly for soft soap manufacture.

-It may  also be used as fertiliser for cocoa, vegetables, and food crops.

-  it is used  for Jam and marmalade

- Mulch - Cocoa bean shells can be used as an organic mulch and soil conditioner for the garden.

Cocoa Business:

Once the beans have been fermented and dried, they can be processed to produce a variety of products. These products include:

- Cocoa butter - Cocoa butter is used in the manufacture of chocolate. It is also widely used in cosmetic products such as moisturising creams and soaps.

Cocoa powder - Cocoa powder can be used as an ingredient in almost any foodstuff. For example, it is used in chocolate flavoured drinks, chocolate flavoured desserts such as ice cream and mousse, chocolate spreads and sauces, and cakes and biscuits.

Cocoa liquor - Cocoa liquor is used, with other ingredients, to produce chocolate. Chocolate is used as a product on its own or combined with other ingredients to form confectionery products.
